i've never read the eu before so i need some advice, where do i start? are there any books i should start with or any i can skip? Unsure
You should start with the Thrawn Trilogy books by Timothy Zahn:
Heir to the Empire
Dark Force Rising
The Last Command
Timeline wise, you should start with the two Darth Bane books (Path of Destruction and Rule of Two) then Darth Maul: Shadow Hunter and Cloak of Deception (which is a lead in to The Phantom Menace).
Or if you wish to start right where Return of the jedi ends, read The Truce at Bakura.
Heir to the Empire
Dark Force Rising
The Last Command

Read these before anything else no matter what anyone else says.

You could, but you'll probably be a little lost as the NJO contains alot of characters introduced in earlier books. At the least, you should read the Thrawn trilogy, Jedi Academy trilogy and the Hand of Thrawn duology.
Sorry to be a massive bumper, but I was wondering, are there any books worth skipping until the end?

A few of the old books from the 90s are worth skipping as they can be dull.

As I've said, start with the Thrawn Trilogy then go for the Jedi Academy Trilogy then the X-Wing series and finally the Hand of Thrawn Duology. After that, you can pretty much pick and choose.
On a related note, does anyone have a list of post-ROTJ books in chronological order? I'm interested in reading more, and I want to do it in order.
